Handforged Petty, High Carbon monosteel
Last handforged Petty of a winter custom set. This knife is forged in charcoal from 1095 high carbon steel, at 62hrc.
With a gentle arc and slim profile, it is designed to handle food preparation with ease, whilst being slightly tougher than a higher carbon blade, with excellent edge retention.
The handle is hand shaped, made from solid, local Cherry and reclaimed Black Walnut. The octagonal shape fits snugly into the palm and it is the perfect length to give solid control. Highly polished by hand and finished with a mineral oil and beeswax blend to bring out the subtle and beautiful patterns in the wood.
This knife is primarily designed for vegetable, fruit and boneless protein preparation, I do not recommend using it for deboning meat and poultry.
It is a carbon steel blade, so over time will develop its own unique patina and colouring, this is normal, and reflects your cooking habits. It will require some basic care.
