A handforged, single steel high carbon knife, with a stone ground finish.

This solid, but nimble knife is a classic Japanese petty shape. An easy to use blade that regardless of your ability is versatile and quick. A fairly substantial heel gives it a bit of weight behind the cuts, whilst the thinner, leaf tip is great for fine work without being as delicate and vulnerable as a K tip knife.

The balance is centered so the knife sits snugly in the palm but has a bit of force behind its cuts. With a gentle arc that flattens towards the heel it has a smooth rocking motion but can chop securely whilst remaining stable.

Handle is of solid cherry wood, with brass spacer and blackwood ferrule, and a traditional burnt in tang.

Perfect for prep, and detailed work in the right hands. Ideally suited to veg, fruit, proteins and small fish. Not recommended for deboning meat due to its hardness at 63hrc.

It is a carbon steel blade, so over time will develop its own unique patina and colouring, this is normal, and reflects your cooking habits. It will require some basic care.
