Japanese style Petty, Kiritsuke

£110.00
sold out

A lightweight handforged petty knife, modelled after the kiritsuke and is my favourite petty shape, offering fantastic versitality, ease of use and is very comfortable. The heel offers great knuckle clearance for a smaller knife, as well as allowing easy chopping motion. It has a nimble tip for fine work and a gentle arc to the blade for smooth slicing and rocking.

It is forged from 1095 high carbon monosteel at 62hrc, with a clean forging line that contrasts the brush finished blade.

Handle is hand finished from Pear and panga wood, octagonal for a comfortable and versatile grip. This is polished with a beeswax balsam for a rich and protected finish.

There is a slight blemish in the forge line from sanding.

It is a carbon steel blade, so over time will develop its own unique patina and colouring, this is normal, and reflects your cooking habits. It will require some basic care.

By purchasing this knife you are confirming you are over 18 years old and I accept no responsibility for anyone imitating or purchasing a blade for anyone under the age of 18.

Cutting edge: 109mm

Handle: 107mm

Total length: 227mm

Heel: 32mm

Nose height: 14mm

Weight: 63g
