A slight hybrid between a Japanese blade shape and western handle, they remind me of vintage French cooking knives.

Handled with solid Panga wood with a Brass pipe ferrule. These knives are simple, practical and comfortable to use.


82mm Paring (Middle) is small enough to be used in hand whereas the 91mm petty (Right) is best suited to on-the-board work.

Monosteel 80crv2 for a longer lasting edge. Not made for deboning.


It is a carbon steel blade, so over time will develop its own unique patina and colouring, this is normal, and reflects your cooking habits. It will require some basic care.
