Olly’s Sujihiki

An early commission from a trusting friend. This knife really pushed my skills in forging as the length and hand hammering of the bevels was not something I had done before. The first attempt resulting in a serious warp (EDIT: I know now how to deal with this, but at the time, I simply started again and the result was a better, more interesting knife).

I decided in the end to clad the high carbon core with 15n20 carbon steel. after etching this didn’t quite give the contrast I was hoping for but still a beautiful, early knife nonetheless. Beech and Blackwood on the handle, a good choice for a knife being used on the pass of a busy kitchen.

Update: Still going strong on the front line.
